Favorite Spinach Pie

We have been making "spinach pie" for about 15 years now! This started as a weekly family favorite that was inspired by my mother in law from Buenos Aires, Argentina when I first met the family and she made this amazing simple (spinach quiche). I remember the delicious, simple flavor of the spinach along with the tasty crust and served with a side of balsamic glazed tomatoes. Since I first started cooking, this recipe was always on our menu to welcome guests and prepare dinner for the family.

My kids too have grown up with this recipe. At first it was a traditional quiche with the eggs to hold it together, but through the years of switching to more plant based living, I was able to adapt the recipe to allow for variations of 100% vegan back to using some cheese etc. to keep it simple.

For our Monday cooking video, Lucas will be showing you our latest "easy" spinach pie recipe - but I'll also add some of the variations if you would like to play with the flavors and omit the cheese and butter.

It's funny that my husband was super surprised we were sharing the recipe, it was a secret for so many years when we had our meal delivery biz...the spinach pie was made into bite size morsels over and over for tastings of what we could deliver! So many asked for the recipe, but this is the first time we are sharing...and it feels right. I hope you enjoy as much as we have - and don't forget the ripe tomatoes with balsamic!


Easy Spinach Pie


Ingredients:

  • 1 frozen bag chopped spinach

  • 4 TBS flaxmeal

  • 1 Soyrizo (Trader Joe's) package

  • 1 Cup shredded mozzarella and more to top

  • 1 already made pie crust

Directions:


  • Preheat oven to 350

  • Thaw Spinach and place in large mixing bowl

  • Make flax "egg" with 4 TBS ground flax meal and equal water - if too sticky add a slight bit of water to mix and beat like an egg until mixture moves around all together

  • Mix thawed spinach, flax "egg", soyrizo package, and 1 cup shredded cheese until all ingredients are connected

  • Pre made pie crust - depending on your crust, it will be either already in a pie tin, or you will need to mold it into the pie tin (our video will be molded by Lucas) or you can make the crust Vegan with my Walnut crust recipe!

  • Place the spinach mix into your pie mold and spread evenly

  • Top with additional shredded cheese

  • Bake in oven for 45 min.




Vegan Tips:

No cheese - use instead about the same amount of Nutritional Yeast

No Soy - you can opt for a package of Knorr's Vegetable Soup Mix (dry pack) for flavor or create a spicy herb mix
